How do I tell it which pages to remove?

List page numbers separated by commas, and use a hyphen for a span. For example 2, 5-7 removes page two and pages five through seven. Page one is the first page.

Will the rest of the document change?

No. The pages you keep are copied exactly as they are, in their original order. Text and images stay sharp because nothing is re-compressed.

Can I remove all but a few pages?

You can, but extracting is easier for that. If you only want to keep a handful of pages, the Extract pages tool lets you list the pages to keep instead.
